Introduction

Food is any substance consumed by an organism for nutritional support. Food is usually of plant, animal, or fungal origin and contains essential nutrients such as carbohydrates, fats, proteins, vitamins, or minerals. The substance is ingested by an organism and assimilated by the organism's cells to provide energy, maintain life, or support growth. Different species of animals have different feeding behaviours that satisfy the needs of their metabolisms and have evolved to fill specific ecological niches within specific geographical contexts.
Omnivorous humans are highly adaptable and have adapted to obtaining food in many different ecosystems. Humans generally use cooking to prepare food for consumption. The majority of the food energy required is supplied by the industrial food industry, which produces food through intensive agriculture and distributes it through complex food processing and food distribution systems. This system of conventional agriculture relies heavily on fossil fuels, which means that the food and agricultural systems are one of the major contributors to climate change, accounting for as much as 37% of total greenhouse gas emissions. Cooking, also known as cookery, is the art, science and craft of using heat to make food more palatable, digestible, nutritious, or safe. Cooking techniques and ingredients vary widely, from grilling food over an open fire, to using electric stoves, to baking in various types of ovens, to boiling and blanching in water, reflecting local conditions, techniques and traditions. Cooking is an aspect of all human societies and a cultural universal.
Preparing food with heat or fire is an activity unique to humans. Archeological evidence of cooking fires from at least 300,000 years ago exists, but some estimate that humans started cooking up to 2 million years ago.
The expansion of agriculture, commerce, trade, and transportation between civilizations in different regions offered cooks many new ingredients. New inventions and technologies, such as the invention of pottery for holding and boiling of water, expanded cooking techniques. Some modern cooks apply advanced scientific techniques to food preparation to further enhance the flavor of the dish served. (Full article...)

Danish Bacon is a brand under which Danish bacon is sold in the United Kingdom. The product has "Danish" stamped on the rind between wavy lines. The Danish farmers producing Danish Bacon and their co-operatives were represented by Danske Slagterier, whose UK subsidiary was the Danish Bacon and Meat Council. Danske Slagterier was absorbed into a Danish agricultural umbrella organisation in 2009. The majority of Danish bacon is produced through the farmer-owned co-operative Danish Crown. The co-operative system has low costs because of the scale (25 million pigs per year) and the elimination of the need for markets. Most of the production is for export.
Danish pig exports started to the UK in the mid-19th century when exporting to Germany became difficult and have grown ever since despite attempts by UK domestic producers and other importers to compete. They have not been able to keep pace with Danish modernisation of the curing process and increasing centralisation. (Full article...)

Kosher foods are foods that conform to the Jewish dietary regulations of kashrut (dietary law). The laws of kashrut apply to food derived from living creatures and kosher foods are restricted to certain types of mammals, birds and fish meeting specific criteria; the flesh of any animals that do not meet these criteria is forbidden by the dietary laws. Furthermore, kosher mammals and birds must be slaughtered according to a process known as shechita and their blood may never be consumed and must be removed from the meat by a process of salting and soaking in water for the meat to be permissible for use. All plant-based products, including fruits, vegetables, grains, herbs and spices, are intrinsically kosher, although certain produce grown in the Land of Israel is subjected to other requirements, such as tithing, before it may be consumed.
Kosher food also distinguishes between meat and dairy products. Meat products are those that comprise or contain kosher meat, such as beef, lamb or venison, kosher poultry such as chicken, goose, duck or turkey, or derivatives of meat, such as animal gelatin; non-animal products that are processed on equipment used for meat or meat-derived products are also considered to belong to this category. Dairy products are those which contain milk or any derivatives such as butter or cheese; non-dairy products that are processed on equipment used for milk or milk-derived products are also considered as belonging to this category. Because of this categorization, meat and milk or their respective derivatives are not combined in kosher foods, and separate equipment for the storage and preparation of meat-based and dairy-based foods is used in order for food to be considered kosher. Selected cuisine -
Ancient Greek cuisine was characterized by its frugality for most, reflecting agricultural hardship, but a great diversity of ingredients was known, and wealthy Greeks were known to celebrate with elaborate meals and feasts.
The cuisine was founded on the "Mediterranean triad" of cereals, olives, and grapes, which had many uses and great commercial value, but other ingredients were as important, if not more so, to the average diet: most notably legumes. Research suggests that the agricultural system of ancient Greece could not have succeeded without the cultivation of legumes. (Full article...)

Saffron (/ˈsæfrən, -rɒn/ ) is a spice derived from the flower of Crocus sativus, commonly known as the "saffron crocus". The vivid crimson stigma and styles, called threads, are collected and dried for use mainly as a seasoning and colouring agent in food. The saffron crocus was slowly propagated throughout much of Eurasia and was later brought to parts of North Africa, North America, and Oceania.
Saffron's taste and iodoform-like or hay-like fragrance result from the phytochemicals picrocrocin and safranal. It also contains a carotenoid pigment, crocin, which imparts a rich golden-yellow hue to dishes and textiles. Its quality is graded by the proportion of red stigma to yellow style, varying by region and affecting both potency and value. As of 2024, Iran produced some 90% of the world total for saffron. At US$5,000 per kg or higher, saffron has long been the world's costliest spice by weight. (Full article...)

While quickbread "American" muffins are often sweetened, there are savory varieties made with ingredients such as cornbread muffins and cheese muffins, and less sweet varieties such as traditional bran muffins. The quickbread muffin originated in North America during the 19th century. (Full article...) The muffins pictured are a variation on the classic lemon poppy seed muffin. Made with real lemon zest and covered with a lemon-flavored confectioners glaze, they are an ideal companion for a Sunday brunch.

Human cultivation and use of saffron spans more than 3,500 years and extends across cultures, continents, and civilizations. Saffron, a spice derived from the dried stigmas of the saffron crocus (Crocus sativus), has through history remained among the world's most costly substances. With its bitter taste, hay-like fragrance, and slight metallic notes, the apocarotenoid-rich saffron has been used as a seasoning, fragrance, dye, and medicine.
Crocus cartwrightianus, a plant native to mainland Greece, Euboea, Crete, Skyros and some islands of the Cyclades is a possible ancestor of saffron. A study reported in 2019 that the authors considered that a cross between two cytotypes of Crocus cartwrightianus was responsible for the emergence of Crocus sativus. This was probably a unique or very rare event as there is no genetic diversity in commercial saffron today. Another study in 2019 suggested that a population of Crocus cartwrightianus near Athens in Attica was the closest match to the theoretical ancestors of Crocus sativus. (Full article...)
